Red Velvet Brownie Recipe (Healthy)

Valentine’s day is fast approaching, and I believe it’s time to bring back my favorite in-theme recipe!

As women navigating it all, it’s important we learn to find ways to nourish ourselves fully. Our body needs nourishment (through nutrients), our soul needs nourishment (through pleasure), our mind need nourishment (with wonder), and our spirit needs nourishment (with connection).

When we are well nourished in all aspects, we find that our resilience is stronger, our joy is wider, and our radiance is palpable. We become THAT woman.

And while that can feel like a dreamy and unattainable future, the truth is that we become grounded in our radiance with one small step at a time.

Here is one way you can nourish your body and soul, in a small practical and doable step.

This sweet treat recipe is meant to support your gut health, and give you a bunch of nutrients you need, especially around your period. Plus, the color is a perfect match for this time of the year (or your time of the month).

Preparation: 20 minutes Baking: 30 minutes Quantity: About 16 squares

Ingredients

  • 260g white chocolate in small pieces

  • 30ml (2 Tbsp) milk of choice

  • 3 medium-sized beetroots, cooked, peeled, and cut into small pieces

  • 2 eggs

  • 160 ml (2/3 cup) whole wheat flour

  • 2.5 ml (1/2 tsp) baking powder

  • 250 ml (1 cup) pecan nuts, coarsely chopped

Instructions

  1. Preheat oven at 180 ºC (350 ºF)

  2. Mix 200 gr of white chocolate with the milk, and slowly melt on low heat. If using the microwave, melt in increments of 30 seconds, to avoid the chocolate from burning. Mix until the texture is even.

  3. Blend the beetroots in a blender until the texture is a granulous mash.

  4. Mix the beetroot mash and the chocolate until creamy.

  5. Mix in the eggs, then gradually add in the flour and baking powder, until thick and homogenous consistency. Add the pecans and mix in.

  6. Butter and flour your mold, and pour your brownie dough in. I like to use a square mold that makes the brownies not too high. Mine is about 30 cm wide.

  7. Bake for about 30-35 minutes in the oven, until a toothpick comes back clean after being dipped. Let cool down.

  8. While it cools, melt the rest of the chocolate and pour on top of the brownies (trust me, it adds a sweet touch that makes everyone come back for seconds) and a few pecans nuts on top.

  9. Enjoy!
